As we’ve been away, we had a surfeit of black bananas and milk on the turn. And there is only one way to use those items up – MUFFINS hurrah!!
As our planned trip to the year’s first carboot was cancelled (waterlogged field!) what better thing to do on a sunny Sunday morning than a spot of baking?
I found this nice easy recipe here so the toddler and I donned our aprons and got mushing up those bananas.
Despite the toddler only being 2, she ended up with a ton of chocolate at Easter – far more than she (or I) could handle. She loved the novelty of unwrapping the eggs, but only had a bite or two, so the rest of the pieces of broken chocolate went into a big jar, to be eeked out a suitable intervals!
I thought a handful of broken chocolate bits could surely enhance these humble muffins, so in they went! I sprinkled a handful of oats on the top once they were in the cases for a bit of texture too.
20 mins in the oven later, here they are – all warm and luscious!
I can highly recommend these with a big coffee as a way to start a Sunday!!
