Birthday Baking!

A quick post for you this evening, and to be honest its nothing more than a bit of cake porn, but frankly, who doesn’t like looking at cake porn? (I have immense distrust for anyone who doesn’t like cake, it’s one of my personal highlights in life…) So, May has been a busy month   birthday wise, from 2 to 85, we’ve been celebrating the great and the good amongst my lovely friends and family.

My daughter’s best friend in the whole world (with the possible exception of the cats) turned 2, and his Mum knew the cake she wanted, but was a bit hesitant about decorating it. So she made the cake, and brought it over along with a sketch, and whole heap of icing paraphernalia, swiftly accompanied by another friend who delivered my belated birthday pressie (leopard print wellies – ser-weet!!) and we had a good old girl’s night in. The theme was space rockets, and with a lot of kneading of icing, and some delicate placement of cut out pieces I think we made a pretty impressive cake between us, and the birthday boy was very impressed, to quote the man himself “3, 2, 1 BLAST OFF!!”.

From one end of the scale to the other, we also celebrated my lovely Grandad’s 85th Birthday recently too. Now, like many a proud Irish man, he’s rather partial to a drop of the black stuff. So naturally, there was one recipe that I figured would hit the spot…Guinness Cake! There are loads of recipes around, but I used this one. Apart from a slight reluctance to exit the tin, this turned out beautifully, as my Grandad, with a mouthful of said cake, told me!

Finally, my dear friend (and Mum to the toddler mentioned above!) also celebrated her birthday, but it was tainted not just by the fact she is pregnant and couldn’t have a drink (obviously not a huge problem in the grand scheme of things!) but also by the sad news that her Nan was very ill in hospital, so she wasn’t in a huge mood to celebrate. Being a girl after my own heart, I knew a chunk of cake would help cheer her up, so I made a simple yet very tasty victoria sponge, filled with cream cheese frosting and fresh strawberries. Combined with a cup of Earl Grey and a good ol’ gossip, this hit the spot!

    Cake makes everything better. I have an old fashioned baking day at least twice a week and bake for hours filling all the tins.
